Introduction The study of evaporatively-driven convection has a rich and varied history dating back to 1855 when Thomson reported "On certain curious Motions observable at the Surfaces of Wine and other Alcoholic Liquors." Thomson correctly attributed these convective motions to stresses at the free surface of the fluid associated with variations in surface tension resulting from evaporatively-driven gradients in alcohol concentration. In a wine glass, evaporation results in relatively low alcohol concentration and thus high surface tension in the thin film above the meniscus. The wine is thus drawn up the walls of the glass and accumulates in a thick band at the upper edge of the film until the band becomes unstable and releases the `tears of wine.'
